But history has shown us many a times that adversity can be a catalyst for positive change. Right now we are at that juncture where tired of factory-made coffee which lacks natural flavor or quality, new independent roasters are coming up all across the globe and are passionately producing small-batch artisanal coffees by primarily focusing on bean selection, processing methods, preparation and quality.
The emphasis now turns from factories to the farms. Factors like soil, altitudes, environment, harvesting techniques, natural processing methods and bean characteristics are more prioritized than metrics like yield per hectare and tons of coffee processed per hour.
The advent of Specialty Coffee has placed more significance on the origins and farmer’s role in particular, as improvement in green bean quality has to start from the farm level. The importance given to the Farmers in Specialty Coffee has allowed them to turn creative and make a significant value addition to their produce by innovating and adapting new processing methods for producing defect free, well developed, high grown coffees with complex and deeper flavors unique to their regions.
The journey of Specialty Coffee begins right from the origins of the beans in the hillside estates where the Roasters typically start by handpicking the beans of their choice. Roasters then meticulously design unique roast profiles for each green bean lot based on the origin, variety, processing method and moisture content. They embark to create a unique balance between multitude of flavors and tasting notes hidden in these well-developed, high grown coffees. In this way, Roasters manually handcraft Specialty Coffee to the finest quality with great finesse and creativity
